35 g. butter

315 g. cream

560 g. Belcolade black selection C501

25 g. glucose

Preparation

Cook the cream, milk and glucose together.

Put in on the chocolate pieces.

Let the butter melt in it in order to get a  nice emultion.

Mix it all with a hand mixer untill you get a smooth and homogeneous sauce.

Serve around 40° C.
